Honey Spiced Glazed Chicken {Delish Dish Recipe 2}

For today’s Delish Dish Recipe I want to share this Honey Spiced Glazed Chicken. This chicken is the easiest chicken I’ve ever made. Speaking honestly hear I’ve hated to cook chicken because I always dry it out or its just nasty. I’ve ruined a lot of chicken dishes, so I tend to stay with ground beef because I’ve never messed that one up! haha
The trick though I’ve heard to any meet cooking is to let it sit out at room temperature for at least 20-30 minutes before cooking. I’ve done this lately and have had a lot better chicken dishes. But I cannot say if that is because I’ve gotten to be a better cook or that is really the secret haha.

Ingredients

  • 8 boneless skinless chicken thighs
  • 1 teaspoon kosher salt
  • 1/2 teaspoon fresh cracked pepper
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon chili powder
  • 2 teaspoons paprika
  • 2 teaspoons garlic powder
  • 1/2 cup honey
  • 2 tablespoons apple cider vinegar
  • foil (optional)

Directions:

  1. Mix spices together in a small bowl; set aside. (The original recipe called for 1 full tsp of all hot spices: peper, red pepper, chili  but I found this too hot for me so I cut the spices down a bit.)
  2. Heat up honey for 10-15 seconds in microwave to get soft. Mix together honey and cider vinegar  in a small bowl; set aside.
  3. Un-tuck chicken thighs so they are flat. (Here, I typically trim off all the fat that kinda grosses me out. I’ve found a fork and pair of kitchen scissors does the trick pretty well.)
  4. Cover both sides in seasoning. (If you want your chicken very spicy cover every inch in the spice mix, but if you just want go flavor spread the spices out well.) Set the spiced chicken flat onto sheet pan. (I put foil on my pan so that clean up is easier, as the honey glaze gets pretty hard to get off later.)
  5. When all chicken as been seasoned put under broiler. (My broiler asked for a temperature so I put it on 400 degrees Fahrenheit. If you have a gas oven with a bottom broiler set your oven to 400 degrees for about 15 – 20 mins.)
  6. Cook for 5-7 minutes on one side and flip.
  7. Cook for a 5-7 minutes on other side.
  8. Flip one last time and then baste (or brush with cooking brush) the chicken in honey/cider mixture. Be sure to really get the chicken covered. Add to oven again and let it cook under the broiler for a few minutes until the honey starts to thicken up and glaze. (The original author of this recipe said “it may smoke a little but this is completely normal.” but I’ve never had this problem with this recipe.)
  9. Take chicken out of oven and let rest for a few minutes before eating as the chicken will be very hot.
